Kale Salad
4 Cups Kale, fresh and finely chopped
4 Radishes, sliced
3 Green Onions, sliced
½ Cucumber, sliced
½ Red or Orange Pepper, diced or speared
½ Cup Black or Green Olives, sliced
1 Medium Tomato, chopped
4 Tbs Pumpkin Seeds, roasted
Dressing:
2 Tbs Soy Sauce or Bragg’s Liquid Aminos
2 ½ Tbs Lemon Juice
2 Tbs Olive Oil
1 tsp Onion Powder
¼ - ½ tsp Garlic Powder
½ - 1 tsp Nutritional Yeast Flakes (optional)
Combine all salad ingredients and separately combing all dressing ingredients. Mix both together well and refrigerate ½ hours before serving (optional)
Yields 6-1 cup portions
